We do have Turbo fryers which are a
higher power rating than our standard fryers, those are available in
three-phase only. The reason why you would need a higher power rating is in
the event that you’ve got a busy restaurant, you’re cooking mainly with
frozen chips. Every time you drop a basket of chips into the fryer
you’re basically dropping a block of ice into the oil, the temperature goes down
very quickly and the chips are not cooking so you need that temperature to
come right back up very quickly and then start cooking the product. So it’s
accelerating the process and speeding up your recovery time.
