Welcome to nishamadhulika.com We all often make idli which is prepared in very less oil and steamed snack. Today we are making idlis with a different style and taste. We are making potato masala stuffed idli which everyone will relish eating for sure. Let’s start with the procedure. Start with preparing the stuffing for idlis. We already have the batter ready. Heat a pan with 2 tsp oil. We have 2 boiled potatoes, let us peel them. When the oil is sufficiently hot, add mustard seeds to it. Keep the flame low to prevent spices from browning. Let the seeds crackle. Add 8 to 10 curry leaves in the pan as well, followed by ½ inch piece (finely chopped), 1 green chilly (finely chopped) and sauté for a while. Now add 1 tsp coriander powder, less than ¼ tsp turmeric powder and sauté the masala for a while. Then add green peas to the pan and sauté for a while. Let the peas cook for a while. Finely crumble the potatoes. We are done with sautéing the peas, mix crumbled potato to it. Make the potatoes finer like this with pressing with a spatula. Let us add the remaining spices as well. Start with adding, 1/3 tsp dry mango powder, ¼ tsp garam masala, ¼ tsp red chilly powder, ½ tsp salt or to taste and mix everything really well. Stuffing is now done and ready, transfer it to another bowl and let it cool down. Add some green coriander as well to the stuffing. Stuffing is now ready. We already have the prepared idli batter. To see the method for making idli batter, visit my website and channel. Now let us start with preparing the idlis. We need an idli stand for making the idlis. To steam the idlis heat water in a vessel. You can steam the idlis in pressure cooker or in any vessel which can hold the idli stand properly. Heat 2 cups of water in the vessel until it start simmering. Meanwhile let us prepare the idli stand. Pour some oil on each mold and grease them well. Add ½ tsp salt or as per taste to 1 bowl idli batter. After adding salt to the batter, don’t whisk the batter too much. Just stir to mix the salt well in the batter. Whisking the batter will make it loose air bubbles from it and the idlis will not come out spongy. Now prepare small balls from the stuffing to fill the idlis. Bind the stuffing like this with your hands and place them on a plate. Now pour little amount of batter on each mold and then place one stuffing ball over it like this, pushing it downwards. Pour some more batter, covering the stuffing. Cover the stuffing well using a spoon. Similarly prepare all the molds. Place the stand over a bowl to prevent it from shaking. Then arrange the mold on the stand like this. Fill all the molds with the batter like this. After arranging the molds on the stand, screw them. Now let us steam the idlis. Water has started simmering and there is formation of steam in the vessel. Place the idli stand inside the vessel and let it steam for 10 to 12 minutes. Cover it will and keep the flame medium-high. After 12 minutes, check the idli. Turn off the flame as the idli appears puffy and are cooked through. Within 10 to 12 minutes idlis are cooked well. Take out the idli stand from the vessel but let it cool down a little as it’s hot. Open the screw and separate out the molds from the stand so that it cools down quickly. Use a towel to hold the molds as they are still hot. Let the idlis cool down a little more and then separate them out from the molds. Avoid taking out idlis from the molds when they are steaming hot as the shape spoils. The idlis have cooled down a little but still cannot be touched with hands, so place it over a towel. Now run a knife all around the idlis like this to separate it from mold. The idlis are really good. Likewise separate out rest of the idlis as well from the molds. Lip smacking, mouth drooling aloo masala stuffed idlis are ready to be served. Making these delectable idlis is really easy. Serve these devouring potato stuffed masala idlis with green coriander chutney, coconut chutney, peanut chutney or any other chutney as per your desire.
