Today on The Stay At Home Chef I’m showing you how to make Authentic Carne Asada. Now, I may not be Mexican, but I’ve lived in Southern California for most of my life and I’ve been spoiled with some of the best Mexican food you can get North of the border. So while Mexican food may not be a part of my heritage, it has certainly played a big part in my life. Today I’m going to use a really nice, choice-grade flank steak. You can see that it looks like it has lines running through it. This is called the grain of the beef. You’ll want to remember what that grain is because you want to slice against the grain. The key to great flavor in a carne asada is to marinate your meat. We’re going to save ourselves some dishes and make our marinade directly in a gallon-sized ziploc bag. So I’ll pour in 1/2 cup orange juice 1/4 cup olive oil the juice from 2 limes 1 cup of chopped cilantro leaves 1/2 teaspoon of salt and 1/4 teaspoon of pepper 1 minced jalapeno 4 cloves of crushed garlic and then 2 tablespoons of white vinegar. Seal this up real quick, and squish it around until it’s mixed. And then we can put our meat in. Seal it back up. Make sure it’s sealed really tight… And squish it around so that the meat gets covered by the marinade. Put this in the fridge for 2 to 12 hours. If you can swing 12 hours then I highly recommend it so that the meat has all that time to absorb that really great flavor. And due to the magic of YouTube that’ll be in about 2 seconds. Ta-da! It’s been about 6 hours. I’ve got the grill outside all heated up and it’s ready for our meat. So we’ll just take the meat out of the bag and slap it on the grill. It will need to cook on the grill for about 7-10 minutes per side on the highest heat. You want really nice sear marks on this. Once it’s done, pull it off the grill and let it rest for at least 10 minutes before slicing into it. And remember, slice against the grain. Thanks for watching!
